Samp and potatoes, or ‘samp en patats’ as it is known in South Africa, is a traditional dish made from corn kernels (samp) cooked with pieces of potato. It can be served as a side dish to accompany other meals or enjoyed on its own. In many parts of the country this meal has become part of the culture and history of South Africa, making it an important part of local cuisine.

Ingredients For Samp & Potatoes

The ingredients for samp and potatoes are quite simple but all essential:

-Corn Kernels – 1 cup

-Potatoes – 2 medium sized ones diced into cubes

-Onions – 1 small onion finely chopped

-Garlic – 3 cloves crushed

-Tomato – 1 medium tomato diced into cubes

-Salt & Pepper to taste

Instructions On How To Cook Samp With Potatoes

1. Begin by washing your corn kernels then placing them in a large pot filled with plenty of boiling water. Simmer for 10 minutes until the corn kernels are tender yet still slightly crunchy. Once done drain off any excess liquid before setting aside to cool down completely.

2. While the corn cools off heat some oil in another pot over medium-high heat, then add in your onions and garlic before sautéing until they turn soft and lightly golden browned around 6-7 minutes should do it nicely!

3. Add your cubed potatoes to the same pan you used for cooking onions & garlic along with salt & pepper according to taste preference followed by stirring everything together well so that everything gets evenly coated with flavor before covering up your pan allowing everything cook through properly without burning about 8-10 minutes should suffice here! 4 . Lastly throw back those cooled off corn kernels you set aside earlier plus tomatoes giving one final stir before lowering heat down low letting simmer away slowly covered again till all ingredients look soft enough when poked/prodded gently using fork/spoon which shouldn’t take too long at this point! 5 .
